Pour 2 liters of water into a large pot and bring to a boil over high heat.

Once the water is boiling, add 1 teaspoon of salt and then add the packet of egg noodles. Stir well to combine.

Cook the noodles for about 7-8 minutes until approximately 90% cooked. The noodles should be partially softened but still have some firmness. Drain and set aside.

Heat 3 tablespoons of oil and quickly scramble 3 tablespoons of beaten egg, breaking it into fine crumbles. Add 0.25 teaspoon salt and 0.25 teaspoon turmeric powder. Mix well.

Add 1 teaspoon chili powder and adjust the heat as needed for flavor development. Stir in 1 tablespoon white vinegar and 1 tablespoon soy sauce, mixing thoroughly.

Add the drained noodles to the mixture. Chop 2 green chilies and add to the noodles, stirring well. Adjust salt and seasonings to taste.
