Street Style Veg Frankie (Vegetable Roll)

Combine wheat flour with salt and oil in a bowl. Gradually add water while mixing and kneading until you form a smooth and soft dough. Adjust water amount as needed—avoid making it too wet.

Prepare the vegetables: peel and cut onions into long strips, remove capsicum seeds and cut into long pieces, peel and grate carrot into fine shreds, peel and grate potato into fine shreds.

Heat oil in a pan and temper with cumin seeds until fragrant. Add the sliced onions and stir-fry until partially cooked.

Add the capsicum strips and stir-fry until half-cooked. Then add the grated potato and carrot shreds, mixing well.

Add the tomatoes and stir well. Cover the pan and simmer for about 2 minutes until all vegetables are tender.

Remove the lid, add chilli powder and garam masala, and mix thoroughly. Adjust the spice level to your preference.

Set the vegetable filling aside to cool slightly.

Take a small portion of dough, shape it into a ball, and roll it in dry flour. Roll it out into a thin, square-shaped flatbread.

Place the flatbread on a hot pan or griddle and cook until both sides turn golden brown.

Transfer the cooked flatbread to a plate and spread a layer of the vegetable filling on top.

Top with onion strips and carrot shreds arranged neatly in long pieces.

Top with some tomato pieces, then roll the flatbread tightly into a cylindrical shape to form the frankie.
