Ingredients: 90 g Japanese short-grain rice (uncooked); 120 ml water; ½ tsp sake; 130 g thinly sliced beef; 40 g onion; 60 g green onion (negi); 60 g grilled tofu (yaki-dofu); 30 g spinach; 40 g shirataki noodles; 2 tsp vegetable oil; 1 tbsp soy sauce; 1 tbsp sugar; 1½ tbsp mirin; 1½ tbsp sake; 2 tbsp water; ½ tsp dashi powder; ~1 egg yolk; ~1 tbsp pickled red ginger (beni shoga); ~¼ tsp shichimi togarashi (Japanese seven-spice powder)

Japanese short-grain rice (uncooked)90 g
water120 ml
sakeoptional, for fragrant rice½ tsp
thinly sliced beefribeye or chuck roll recommended130 g
onion40 g
green onion (negi)60 g
grilled tofu (yaki-dofu)60 g
spinach30 g

Rinse the rice and drain. Add water and optional sake to the rice, mix well, then cook until done.

Cut green onions diagonally into bite-sized pieces. Slice onion into half moons. Cut spinach into bite-sized pieces. Cut tofu into bite-sized pieces.

Bring water to a boil. Cook shirataki noodles for 2 minutes and drain. Blanch spinach for 1 minute and drain.

Mix together soy sauce, sugar, mirin, sake, water, and dashi powder to make the sukiyaki sauce.

Heat oil in a pan over medium heat and warm through.

Add thinly sliced beef to the hot pan. Cook briefly until starting to brown. Add green onions and cook a little longer. Then add sliced onion.

Cook for a few minutes. Add shirataki noodles. Finally add the tofu and pour in the sauce.

Simmer for about 5 minutes until all ingredients are infused with sauce.

Place cooked rice in a bowl and mound all the beef, vegetables, and tofu on top.

Top with a pasteurized egg yolk if desired. Garnish with pickled red ginger and seven-spice powder if available. Serve and enjoy.
