Ingredients

Prepare the syrup by combining sugar, water, cinnamon sticks, orange or lemon peel, and citrus juice in a saucepan. Heat over medium heat until it comes to a boil and all sugar dissolves.

Reduce heat and simmer for about 5 minutes. Remove from heat, stir in the honey and vanilla extract, then set aside to cool completely.

Make the filling by pulsing the walnuts in a food processor until finely chopped. Transfer to a bowl and combine with breadcrumbs, sugar, cinnamon, cloves, and citrus juice. Mix well with a spoon.

Melt the butter and set aside. Remove the kataifi dough from packaging and thaw at room temperature for at least an hour or two until easy to work with.

Preheat the oven to 350°F (175°C). Gently separate and fluff out the kataifi dough, keeping it covered with a damp towel to prevent it from drying out.

Assemble the rolls: Take a handful of kataifi dough about the size of your hand and lay it flat. Brush generously with melted butter. Place a tablespoon of the walnut filling at the bottom and roll tightly, tucking in the sides if possible. Repeat until all dough and filling are used.

Place the rolls snugly in a 9×13 inch baking pan. Pour the remaining melted butter over them, ensuring they are well coated.

Bake in the preheated 350°F oven for 45–50 minutes until golden and crisp.

Remove the rolls from the oven and immediately pour the cooled syrup evenly over the hot rolls. Let them absorb the syrup for at least 35 minutes.

Serve the kataifi rolls at room temperature. They can be topped with ice cream, whipped cream, or chocolate if desired, or enjoyed plain. Best served with hot coffee.
