The Sweet & Spicy Chicken Noodles Meal Prep I Can't Stop Making

Cut 800g of boneless chicken thighs into bite-sized pieces or strips. Place in a bowl and add bicarbonate of soda, a pinch of salt, and cracked black pepper. Mix well with clean hands and let sit for 15 to 20 minutes to allow the bicarb to tenderize the meat.

In a separate bowl, combine sriracha, soy sauce, honey, rice wine vinegar, brown sugar, cornflour, and chilli flakes. Add minced garlic and grated ginger, whisking until evenly combined. Set aside.

Prepare vegetables: slice the red capsicum into even strips, trim and wash the bok choy, cut the broccolini into bite-sized pieces, and thinly slice the spring onions (optional).

Heat a wok over high heat until smoking, add neutral oil, and sear the chicken in two batches to avoid crowding. Let each batch sit for about 1 minute, then toss for 2 to 3 minutes until golden brown. Remove and set aside.

Return the wok to high heat, add a teaspoon of oil, then add the red capsicum and broccolini. Cook for about 2 minutes until softened and lightly charred. Add bok choy and the garlic-ginger paste, cooking for about 1 minute until fragrant.

Lower the heat slightly, add the prepared sauce, and toss everything together for about 30 seconds. Add the cooked chicken with its resting juices and fresh egg noodles (450g). Add some of the spring onions, mixing until the noodles are evenly spread and well coated.

Cook for 1 to 1.5 minutes more until the noodles soften and everything becomes thick and glossy. Check the seasoning and adjust if needed. Divide evenly into 5 portions and place in containers.

Garnish with toasted sesame seeds, remaining spring onions, sliced red chilli, and fresh coriander (optional). Let cool for 15 to 20 minutes, then refrigerate. Keeps in the fridge for 4 days or freezer for up to 3 months. Reheat in a pan with a splash of stock or water, or microwave for about 3 minutes, stirring halfway through.
