Sweet, Spicy, Tangy Thai Chili Dipping Sauce

A simple Thai-style dipping sauce combining garlic, fresh Thai bird chilies, brown sugar, fish sauce, and lime juice. Perfect for serving alongside grilled chicken or other Thai dishes.

Prepare garlic cloves by lightly smashing off the bottom and tilting upward to crack them open for easy peeling.

Slice the Thai bird chilies thinly. Though quite hot, they provide an essential bright fruity aroma to the sauce.

Add the garlic and chilies to a mortar with brown sugar. Pound together to create a sugary, garlicky, spicy paste.

Stir in fish sauce—about 2 to 4 tablespoons (roughly a quarter cup)—and mix well.

Finally add fresh lime juice. The ideal ratio is roughly equal parts fish sauce, lime juice, and sugar, with garlic and chilies adjusted to taste. Mix everything together and taste, adjusting seasonings as needed.
