Crispy corn tortillas filled with mashed potatoes and melted Oaxaca cheese, fried until golden and topped with marinated carne asada. A beloved Mexican classic that is surprisingly easy to prepare at home.

Ingredients

Beef chuck steak, flank steak, or skirt steak (thinly sliced)2 lb

Prepare the carne asada marinade by combining orange juice, lime juice, oil, minced garlic, and all spices in a bowl. Mix well and taste to adjust seasonings as needed.

Add the thin-sliced beef to the marinade, making sure it is well coated. Mix in the sliced onion and chopped cilantro. Cover with plastic wrap and set aside to marinate.

Peel the potatoes and remove any dark spots to speed up cooking time. Rinse thoroughly with water.

Roughly chop the potatoes into medium pieces and transfer to a saucepan. Season with salt and cover with water. Bring to a boil over medium heat.

Once boiling, cook for about 15 minutes until the potatoes are fork-tender. Check for doneness with a fork.

Drain the potatoes completely. Mash them down and season with black pepper and garlic powder.

Mix in the Oaxaca cheese to create the potato filling.

Stack the corn tortillas and wrap them in paper towels. Microwave to soften.

Take one tortilla and add a small amount of potato filling. Roll it up tightly to form the taquito.

Repeat the rolling process with remaining tortillas while heating oil over medium heat until very hot.

Carefully place the taquitos seam-side down into the hot oil. Hold for a few seconds, then allow them to fry until golden brown on all sides.

Once golden, remove the taquitos from the oil and drain on paper towels. Repeat with remaining taquitos.

While the taquitos fry, cook the marinated beef in a skillet over medium-high heat, stirring occasionally until fully cooked through.

Once the beef is fully cooked, chop it into small pieces and return it to the skillet to keep warm until serving.

Plate the taquitos and top with desired garnishes such as guacamole, sour cream, cheese, carne asada, lettuce, and salsa. Serve immediately while crispy.
