This delightful classic French dish from the Savoy region combines the rich flavors of cheese, bacon, and caramelized onions. Since traditional Reblochon cheese is unavailable in the US, we prepare it with Brie cheese instead. Creamy, savory layers of potatoes, onion, and bacon enhanced by a subtle kiss of garlic, finished in the oven with melted cheese until bubbly and golden.

Ingredients

bacon½ lb
onionlarge~1 largeest.
Yukon Gold potatoes~2 lbest.
Brie cheesedouble or triple cream~8 ozest.
sour cream¾ cups
white winesuch as Chardonnay or Savoie Blanc~½ cupest.
garlic1 clove
butter~2 tbspest.
salt~½ tspest.

Cut the bacon into pieces and cook in a pan until crispy.

Slice the onion from pole to pole (following the grain) to create nice strips, rather than cutting across the grain.

Add the sliced onions to the bacon fat and sauté slowly until caramelized and golden brown.

Peel the Yukon Gold potatoes and cut them into even slices. Move the knife up and down while cutting to prevent sticking.

Place the potato slices in cold water and parboil until partially cooked.

Preheat oven to 375°F. Drain the cooked potatoes on paper towels.

Add a splash of white wine to the pan and let it reduce slightly for added flavor.

Chill the Brie cheese briefly in the freezer to make it easier to cut. Slice or cut into pieces, optionally removing the rind if preferred.

Butter the bottom of a pie dish. Layer the parboiled potato slices as the first layer.

Spread the caramelized onion and bacon mixture over the potatoes, and season with a little salt and pepper.

Add a layer of sour cream mixed with the white wine reduction, then add more potato slices.

Top with the Brie cheese slices, arranging them evenly over the potatoes.

Place in a 375°F oven and bake until the cheese is melted and bubbly with a golden top, approximately 25 to 45 minutes.

Remove from the oven and let rest briefly before serving. Use a spoon to gently portion, as the layers may be soft.
