Ingredients
beef shank
~2-2.5 lb
est.
tomato
about one

one large slice
1 slice
garlic
small cloves
4 cloves
dried chili peppers
toasted then soaked in water to soften

~1½ tsp

black pepper
~½ tsp

butter
for searing the meat
~2 tbsp

tortillas
for serving

white rice
for serving
~2 cups

charro beans or red beans
for serving

Steps

Toast the dried chilies briefly, then soak them in water until softened and plump.

Combine the tomato, onion slice, and garlic in a pot with the softened chilies, and bring to a boil to make the marinade base.

Let the cooked marinade mixture cool slightly, then blend it into a smooth sauce.

Season the beef shank generously with salt and pepper.

Heat butter in a pan and sear the beef shank until browned on all sides, releasing its juices.

Pour the juices released from searing into the prepared marinade sauce and mix well.

Return the seared beef shank to the marinade sauce, letting it soak up the flavors, then simmer gently until the meat becomes tender and flavorful.

Serve the finished carne adobada with warm tortillas, white rice, and charro or red beans on the side.
