   Pat the steak dry with paper towels and season all sides evenly with salt and pepper.

   Insert a meat thermometer into the center of the steak, place on a cooling rack, and cook in a preheated oven at 95°C (200°F) until the internal temperature reaches 48°C (118°F).

   Mix together 5 tablespoons soy sauce, half tablespoon oyster sauce, 1.5 tablespoons sugar, 3 tablespoons mirin, and 2 tablespoons sake in a small container.

   Once the steak reaches target temperature, remove it from the oven. Heat generous amount of oil in a pan over medium-high heat and sear the steak for 30 seconds to 1 minute per side until browned.
