In a bowl, mix together all sauce ingredients (sugar, vinegar, dark soy sauce, light soy sauce, Golden Mountain soy sauce, chili sauce, water, oyster sauce, and chili flakes) until well combined and sugar is fully dissolved.

Place the sliced pork in another bowl and mix with baking soda, sugar, water, light soy sauce, and tapioca flour. Let the pork marinate.

Heat a wok or large pan with oil over appropriate heat.

Cook the marinated sliced pork until fully cooked, then remove and set aside.

In the same pan, cook the minced pork, then add long beans, bean sprouts, and other vegetables, stirring quickly until combined.

Add the cooked rice noodles and pour in the sauce, tossing everything together until well coated.

Return the cooked pork to the pan and add lettuce, spring onion, Chinese celery, and coriander leaves.

Drizzle with garlic oil and sprinkle with roasted peanuts. Toss everything together and serve.
