Thai Style Grilled Chicken with Spicy Tamarind Sauce

   Prepare the chicken thighs and combine crushed coriander root, garlic, and white peppercorns.

   Mix together palm sugar, sugar, fish sauce, soy sauce, honey, oyster sauce, and milk to create the marinade.

   Combine the herb mixture with the marinade and coat the chicken thighs thoroughly, allowing them to marinate.

   Preheat the oven to 155°C (310°F), place the chicken in, and bake for 15 minutes. Turn the chicken so the skin side faces up.

   Increase the oven temperature to 175°C (347°F) and continue roasting for another 15 minutes until the chicken is fully cooked and the skin is crispy.

   Mix tamarind juice, fish sauce, toasted rice powder, chili flake, lime juice, and palm sugar to prepare the spicy tamarind sauce.

   Add kaffir lime leaves, spring onion, and coriander leaves to the sauce for garnish and flavor.
