Preheat your oven to 350°F (175°C).

In a medium bowl, combine all dry ingredients: flour, baking powder, and salt. Whisk together until evenly combined. Using a scale for flour ensures the best results; if using a measuring cup, fluff the flour before scooping and level it off.

In the bowl of a stand mixer, combine room-temperature softened butter with both sugars (granulated and brown). Cream together until well combined. The butter should be soft enough that you can press your finger into it.

Add the peanut butter to the butter-sugar mixture and beat until fully incorporated and homogeneous with no pockets of unmixed ingredients.

Crack the egg into a small bowl to check for shells, then add it along with the vanilla extract. Mix on low speed until just combined.

Add the flour mixture to the wet ingredients. Mix on low speed until just about combined, then finish mixing by hand with a spatula for about 10 seconds to avoid overmixing.

Line baking sheets with parchment paper. Scoop out approximately 2-tablespoon (40g) portions of dough, roll them gently into balls, and place them on the prepared baking sheets.

Use a fork to press and flatten each cookie, creating a cross-hatch pattern. This helps ensure even baking. You can gently pre-flatten with your palms first to minimize cracking.

Bake at 350°F for approximately 10 minutes until the cookies are set but still soft. Bake in batches if needed.

Allow cookies to cool. Store in an airtight container for up to one week, or freeze the pressed dough on a baking sheet before transferring to a freezer bag; add a few extra minutes of bake time if baking from frozen.
