Preheat your oven to 350°F. Wash the strawberries, remove the hulls, and dice them into small pieces. Transfer to a small bowl and set aside.

In a large bowl, combine the flour, salt, and baking powder. Whisk together the dry ingredients thoroughly.

In a medium bowl, whisk together the granulated sugar, milk, egg, oil, and vanilla extract until the egg is fully broken up and the mixture is smooth and silky.

Gently toss the prepared strawberries with 2 tablespoons of flour to coat them lightly. This helps them stay suspended in the batter during baking.

Prepare your loaf pan with baking spray or butter. Slowly pour the wet ingredients into the dry ingredients and fold gently with a spatula until almost fully combined. Scrape the bottom of the bowl to ensure all ingredients are mixed.
