Ingredients
unsalted butter
all-butter, no oil
~½ cup

combined with a smaller amount of brown sugar

melted milk chocolate
replaces dark chocolate to add sweetness and balance bitterness

Dutch-processed cocoa powder

Steps

Melt the butter, sugar, and chocolate together on the stovetop, stirring until combined.

Stir in the eggs (and remaining sugar) by hand into the melted chocolate-butter mixture until smooth.

Mix in the Dutch cocoa powder, salt, and baking powder until a uniform batter forms.

Fold in a small amount of olive oil for moisture, then stir in the dark chocolate chips.

Pour the batter into a baking pan and smooth the top.

Bake at about 325°F (163°C) for roughly 30 minutes, until a shiny crust forms on top and the inside stays moist and chewy.

Let the brownies cool, then slice and enjoy — aiming for that perfect balance between cakey and fudgy.
