Three-Milk Oatmeal Atole with Chocolate

Ingredients
whole milk
2½ liters
evaporated milk (Clavel brand or similar)
~1 can
est.
sweetened condensed milk (Lechera brand or similar)
1 can
rolled oats
1 cup
chocolate
one chunk and one chocolate tablet
~3-4 oz
est.
cinnamon
~1 tsp
est.
vanilla extract
1 splash
sugar
optional, adjust to taste
~2-3 tbsp
est.
Steps

In a large pot, combine the whole milk, evaporated milk, and sweetened condensed milk.

Place the pot on the stove and bring the milk mixture to a boil.

Once the milk is nearly boiling, grind the oats and add them to the pot.

Add the chocolate chunk and chocolate tablet to the pot.

Add cinnamon and continuously stir the mixture to ensure the oats and chocolate are well incorporated.

Allow the mixture to come to a rolling boil, stirring constantly to prevent sticking.

Once boiling, add a splash of vanilla extract.

Continue cooking, allowing the cinnamon and chocolate flavors to fully infuse. Keep the mixture at a rolling boil for optimal flavor development.

Optional: add sugar to taste if a sweeter atole is desired.

Pour the hot atole into cups and serve immediately while steaming hot, optionally with sweet bread or pan dulce on the side.
