Preheat the oven to 400°F.

Cut vine-ripened tomatoes into large chunks or wedges. Thickly slice the red onion into half-moons and smash the garlic cloves. Place tomatoes, onion, garlic, and fresh basil on a baking sheet. Drizzle with olive oil, a touch of balsamic vinegar, and a pinch of salt.

Roast in the oven for about 30 to 40 minutes until vegetables are deeply caramelized.

In a large pot, heat 2 tablespoons of olive oil. Add diced yellow onion, peeled and roughly chopped carrots, and celery. Sauté gently over medium heat until vegetables soften slightly.

Add the peeled and chopped potato, canned tomatoes, stock, Italian seasoning, and salt. Simmer gently for about 30 to 40 minutes until potatoes and vegetables are tender.

Add the roasted tomatoes, onion, and garlic from the oven to the pot.

Remove the pot from heat. Use an immersion blender or regular blender to blend the soup until silky smooth.

Return the pot to the stove and add the heavy cream. Simmer gently for about 10 minutes on low heat.

Taste and adjust seasoning with salt and black pepper as needed.

Serve in bowls and garnish with fresh basil, a drizzle of cream, and freshly cracked black pepper. Accompany with sourdough bread.
