~2 tbsp
est.
cinnamon sticks
2 pieces
hibiscus flowers
1 handful
guavas
8 pieces
sugar cane
3 pieces
apples
3 pieces
tejocote
¼ kg
piloncillo (unrefined cane sugar)

½ kg
water
~10 cups

Steps
1
Fill a large pot with water and bring it to a boil.
2
Add about half of the piloncillo along with tamarind, cinnamon sticks, and hibiscus flowers to the boiling water.
3
Wash and prepare all the fruit. Start with tejocote, trim the edges, and cut into quarters.
4
Cut the guavas, removing only the edges and dividing them into suitable pieces.
5
Wash the apples and keep the skin intact, then cut them in half.
6
Add the prepared fruit pieces one by one to the boiling pot.
7
Add the raisins and dried plum prunes.
8
Peel the sugar cane and cut it into small pieces.
9
Add the sugar cane pieces to the pot.
10
Allow the mixture to continue boiling until all the fruit flavors blend well together. Taste and adjust sweetness by adding more piloncillo if needed.
11
Once all ingredients are well combined and the drink has a beautiful color, serve hot and enjoy.
