Using a stand mixer with whisk attachment, beat together room-temperature eggs, sugar, and vanilla extract for 10 minutes until the mixture triples in volume.

Reduce mixer to lowest speed and while still beating, slowly add half the flour, then all the milk, then the remaining flour. Stop beating and finish mixing with a rubber spatula.

Pour batter into a buttered 9x13 inch baking pan. Bake for 25 minutes at 180°C (350°F / 160°C fan-forced) until the cake is set.

Cool the cake in the pan for 30 minutes.

Using a thin chopstick or skewer, poke holes all the way through the cake to the bottom of the pan. Make many holes (approximately 130 total) to allow the milk mixture to soak through effectively.

Whisk together the 3-milk soaking mixture (evaporated milk, condensed milk, cream, vanilla extract, and almond extract). Slowly pour this mixture over the cake, allowing time for it to soak in, especially in the middle section, as some liquid may pool along the sides.

Refrigerate the cake for 4 hours or overnight.

Whip together the heavy cream, sugar, and vanilla extract until fluffy. Spread over the top of the chilled cake.

Dust the top with cinnamon powder. Cut into portions and serve directly from the pan.
