Prepare the rice: use a 1:1 ratio of rice to water with a touch of cooking oil in a rice cooker. Once cooked, stir to allow excess moisture to evaporate. If using leftover rice, heat it in a microwave first.

Prepare the ingredients: finely mince the garlic, chop the green onion into small pieces, dice the carrot into small cubes, and drain the frozen peas.

Beat the eggs: crack the eggs into a bowl, add salt, and mix thoroughly.

Prepare the tuna and optional toppings: drain the canned tuna and break it into small chunks. Cut the toasted seaweed into thin strips and set aside the toasted sesame seeds (these are optional garnishes).

Stir-fry the tuna: heat oil in a pan over medium-high heat, sauté the minced garlic, then add the tuna and mix well. Season with salt and black pepper, and stir-fry for another minute to release the tuna's flavor and remove fishiness. Remove from the pan.

Stir-fry the eggs: add a little oil and pour in the beaten eggs. Scramble until fully cooked, then add the rice and break up any large clumps while stir-frying.

Season and mix: add salt, soy sauce, and dark soy sauce. Continue stir-frying until the rice is evenly colored.

Add the vegetables: add the carrot and frozen peas, and stir-fry for about 1 minute to cook them through.

Return the tuna: add the pre-cooked tuna back to the pan and toss well to combine.

Final seasoning: drizzle with sesame oil, sprinkle with black pepper, add the chopped green onion, and toss to combine.
