A quick and easy tuna melt sandwich with a tuna filling made from canned tuna, mayonnaise, corn, and spring onions. Topped with cheese, the sandwich is buttered on the outside and pan-fried until golden brown, creating a crispy exterior while the cheese melts throughout. Simple yet incredibly satisfying.

mayonnaise3 tbsp

Drain the canned tuna and place in a bowl.

Drain the canned corn and add it to the tuna.

Add three tablespoons of mayonnaise.

Chop the spring onions thinly and add to the mixture.

Season with Tabasco, black pepper, and salt to taste. Mix well.

Trim the crusts from the toast if desired. Divide the tuna mixture evenly among four slices of bread, spreading it generously to the edges.

Top each slice with a cheese slice.

Cover with the remaining four slices of bread.

Butter the outside of both sides of the sandwich generously with softened butter.

Heat a skillet over medium to medium-high heat. Place the sandwich butter-side down in the pan and fry until golden brown, about 2 minutes.

Butter the top side, flip the sandwich, and continue frying until the other side is golden brown. Gently press and move the sandwich to ensure even browning and even heat distribution.

Remove the sandwich from the pan and place on a wire rack to cool slightly while the cheese finishes melting. Serve with a green salad if desired.
