This is no ordinary burger. A thick, juicy blend of Wagyu ribeye and short rib, topped with boozy Marsala mushrooms, crispy shallots, a perfectly fried egg, Dijon sauce, and garlic bone marrow butter. The ultimate burger experience.

Ingredients

Wagyu ribeye, cold6 oz
short rib, cold6 oz

cheddar, sliced1 slice

egg, fried sunny-side up1
mayo2 tbsp
Dijon mustard1 tsp
Worcestershire sauce1 tsp
red wine vinegar

Roast bone marrow at 450°F for 15–20 minutes until soft. Remove and mix with softened butter, minced chives, grated garlic, lemon juice, salt, and pepper.

Mix mayo, Dijon mustard, Worcestershire sauce, and red wine vinegar together to make the Dijon sauce.

Coat thinly sliced shallots with flour and fry in oil at 350°F until golden. Drain and season with salt.

Heat olive oil in a pan and cook sliced mushrooms until browned and moisture releases. Add butter and minced shallot, cook 2 minutes. Add Marsala wine, simmer 1 minute. Pour in beef stock and thyme, reduce until glossy. Season with salt and pepper.

Pulse cold short rib and Wagyu ribeye in a food processor until ground. Form into a roughly 6 oz patty using a ring mold, making a small dimple in the center.

Heat oil in a cast iron pan and place the patty. Season with salt and pepper. Cook over medium-high heat about 4–5 minutes per side until golden. Top with cheddar in the final minute of cooking.

Fry an egg sunny-side up in a separate pan. Season lightly with salt and pepper.

Spread Dijon sauce on the bottom bun. Layer the cheeseburger patty, followed by the Marsala mushrooms. Carefully place the fried egg on top and scatter crispy shallots over. Spread garlic bone marrow butter on the top bun and close the burger.

Serve immediately. The burger may be quite messy as the cheese and bone marrow butter will ooze—have napkins ready!
