Prepare the burger meat blend with the specified cuts and season generously with garlic salt and olive oil.

Cook the burger patty in a hot pan while toasting the buns alongside it.

Cook the patty to medium-rare, top with cheddar cheese, cover with a cloche, and add a small splash of water to create steam for melting the cheese.

Remove the patty from heat and let it rest, allowing carryover cooking to complete the cooking process.

Heat equal parts butter and olive oil in a pan until the butter froths, then gently crack and fry an egg until cooked through.

Prepare the Wellington sauce by combining 3 tablespoons of mayonnaise, 2 tablespoons of English mustard, and 2 tablespoons of demi-glace, then mix well.

Place the toasted bottom bun, spread duxelles on it, and position the cheesed burger patty on top.
