Add the pork to the pot and dry-fry it without any oil, since the meat's own fat will render out as it cooks.

Keep stirring until all the moisture has cooked off—watch for the bubbling fat to disappear, which signals it's done. Don't worry if it looks a bit dry or tough; it will soften again once simmered in the broth.

If the fat isn't rendering out, simply lower the heat and continue frying.

For a quick white broth, boil a pot of water and pour it directly into the rendered pork fat—the fat and water emulsify at high heat and instantly turn milky white.
