An easy and delicious baked zucchini casserole layered with sliced zucchini, tomato sauce, and melted cheese. Unlike traditional eggplant parmesan, this version skips frying and breading for a simple, straightforward dish that bakes until the cheese is bubbly.

Ingredients

Slice each zucchini lengthwise into quarter-inch thick slabs, setting aside any rounded ends.

Brush the bottom of a sheet pan lightly with olive oil. Arrange zucchini slabs on the pan so they touch but do not overlap, ensuring all pieces make contact with the hot surface.

Season the zucchini slices lightly with kosher salt and black pepper. Brush the tops with extra virgin olive oil, spreading it evenly with a brush.

Place the pan in the oven and bake until the zucchini becomes soft and pliable.

Once the roasted zucchini has cooled slightly, spread a layer of tomato sauce on the bottom of a baking dish.

Carefully arrange a layer of roasted zucchini slabs over the sauce.

Tear fresh mozzarella into pieces and scatter over the zucchini layer. You can tear it into bite-sized pieces or slice it neatly, depending on your preference.

Sprinkle some grated Parmesan cheese over the mozzarella, then add another layer of tomato sauce.

Continue layering zucchini, mozzarella, Parmesan, and sauce until all ingredients are used. Finish with a layer of sauce on top.
