Cover the bowl and let sit for at least 15 minutes to allow the flavors to infuse into the apples.

For the crumble mix, add flour (and optional rolled oats for extra crunch) to a bowl. Cut in cold butter using your fingertips until mixture resembles breadcrumbs, using a light hand.

Stir in granulated sugar (using white and demerara in equal parts, if desired), ground cinnamon, and ground nutmeg to match the apple spices. Mix gently until evenly combined.

Preheat the oven to 160°C (320°F or gas mark 3).

Stir the apple mixture well, incorporating any juices pooled at the bottom. Spoon into individual ramekins, filling just over halfway.

Spoon the crumble mix loosely over the apples without pressing down or compacting. Leave about 1/4 inch of space below the rim.

Sprinkle a little coarse demerara sugar over the top of each crumble for extra crunch. Repeat with the remaining five crumbles.
