Steps

Preheat the oven to 210°C / 410°F (190°C fan), and place a baking tray inside to heat.

Heat olive oil and butter in a pan, then add the sliced mushrooms with salt and pepper. Sauté for about 5 minutes until softened. Drain any excess liquid if necessary.

Place the pastry sheet on baking paper, fold the edges inward to create a 1cm border, and brush the top with melted butter.

Sprinkle the grated Gruyère cheese over the pastry, then distribute the sautéed mushrooms evenly on top.

Transfer the tart on baking paper onto the preheated baking tray and bake for approximately 30 minutes until golden and crisp on the bottom.

Remove from oven and finish with fresh thyme leaves and salt flakes. Optionally drizzle with truffle oil or good olive oil. Slice and serve.
