Measure the all-purpose flour into a small bowl and set aside.

In a medium pot, combine the butter, water, sugar, and salt, and bring to a boil over medium-high heat.

Once boiling, remove from heat, add the flour, and stir vigorously until it forms a dough ball.

Return the pot to medium-low heat and continue stirring for 1-2 minutes to cook off excess moisture, forming the choux dough.

Transfer the dough to a stand mixer fitted with the paddle attachment and mix on medium speed for about 3 minutes to cool it down.

Add the eggs one at a time, mixing on medium speed after each addition until the batter becomes silky and glossy.

Add the vanilla extract and scrape down the bowl. The dough should be silky, glossy, and thick with a bit of slack.

Fill a piping bag fitted with a large closed star tip with the dough.

Pipe the dough onto parchment paper into shapes about 4 inches long and 3/4 inch thick, snipping with scissors as needed for even length. Pat down any pointy tails with a damp finger.

Freeze the piped churros for about 30 minutes until firm (they can also be kept frozen for up to 2 weeks).

Remove the frozen churros and place them directly into the air fryer basket, spaced about 1 inch apart. If using a combi/oven-style air fryer, place them on parchment paper first.

For a basket-style air fryer: air fry at 375°F for 8 minutes, flip, then reduce to 325°F and cook another 8 minutes until golden brown and dry in the center.

For a combi oven air fryer: preheat, then air fry at 400°F for 8 minutes, flip and remove the parchment, then reduce to 350°F and cook another 8 minutes.

Once the churros are out of the air fryer, spray them with a light coating of neutral cooking oil.

Mix the sugar and cinnamon to make cinnamon sugar, then toss the hot churros in it until evenly coated.
