Soak dried chilies in hot water the day before. Cut the chilies into sections and chop finely. Crush garlic cloves with salt and grind together with the chilies into a paste.

Slice bacon into coarse pieces. Prepare the ground pork belly and chopped bacon.

Add about 1 tablespoon of oil to a pot and add the pork-bacon mixture. Cook over medium to medium-high heat, gradually rendering the fat while scraping off any stuck pieces. This takes several minutes of patient cooking.

In a separate pot, thinly slice half an onion. Add 1 tablespoon of peanut oil, 1/4 teaspoon salt, and just enough water to cover the bottom. Cook over low heat, stirring occasionally, until the onion breaks down.

Continue cooking the pork for about 10 minutes until it becomes golden brown. Transfer to a clay pot to protect the wok's seasoning from the acidity of tomatoes.

Pour the cooked onion into a bowl. Heat a couple of tablespoons of the rendered lard in the clay pot, add tomato paste and fry briefly, then add paprika and the cooked onion.

Add 200g crushed tomatoes, 200ml stock, and 200ml light beer. Season with 1/4 teaspoon chicken bouillon powder, 2 tablespoons dark brown sugar, 1 tablespoon soy sauce, 1/2 teaspoon brown coriander seed, and black pepper. Bring to a boil and simmer over medium to medium-high heat for about 20 minutes to evaporate moisture and soften the onions.

Wait for the mixture to thicken to a lava-like consistency. Mix 1/2 tablespoon of cornstarch with water to make a slurry and add it gradually while stirring.

Add MSG and more brown sugar to taste, a generous crack of black pepper, and 1 teaspoon of Tabasco sauce for sourness. Adjust seasonings to preference.

Cook pasta slightly past al dente, then drain and cool. In a bowl, add 1/8 teaspoon each of salt, MSG, sugar, soy sauce, Worcestershire sauce, and a crack of black pepper.

Add 1 tablespoon of pasta water to the seasoning mixture, then add the pasta and mix quickly. Top generously with the sauce.

Optionally top with pickled jalapenos, chopped green chilies, sour cream, chopped onion, Doritos, cheddar cheese, and scallion as desired.
