In a saucepan, melt butter with brown sugar over medium heat. Add the diced apples and cook until the juices release and apples begin to soften, approximately 2 minutes.

Stir in vanilla extract and cinnamon, cooking another 1–2 minutes. Add a cornstarch slurry (1 tsp cornstarch mixed with 1 tbsp water) and cook for about 30 seconds until thickened. Turn off heat and let cool.

Mix graham cracker crumbs with granulated sugar. Fold in melted butter using a spatula until well incorporated. Spread into a prepared 9-inch springform pan and press firmly and evenly into the bottom using your hands or the back of a measuring cup.

Bake the crust in a preheated 350°F (175°C) oven for 15 minutes while preparing the cheesecake filling.

Using a stand mixer, cream the softened cream cheese for about 1 minute. Add granulated sugar and beat, scraping down the sides of the bowl periodically to ensure everything is well combined. Add eggs one at a time, followed by a splash of vanilla extract, a pinch of salt, and sour cream. Mix until very smooth and fully incorporated.

Make the topping: mix all-purpose flour with brown sugar. Drizzle in melted butter and stir with a spoon using a swirling motion until the mixture resembles coarse crumbles.

Pour the baked crust into a water bath-lined springform pan. Distribute the cooled apple mixture over the cheesecake filling, leaving the apples somewhat exposed at the surface so they interact with the crisp topping. Sprinkle the crumble topping over everything, leaving the very edges of the cheesecake slightly bare.

Pour warm water around the sides of the springform pan until it reaches about halfway up the sides of the pan. Pour water just as you're placing it into the oven to minimize spillage.

Bake in the water bath for 1 hour 15 minutes to 1 hour 20 minutes. The top should be golden-brown, the center should jiggle very slightly in the middle, and the edges should be completely set. If browning too quickly around the 40-minute mark, tent loosely with foil.

Remove the cheesecake from the oven and let it cool to room temperature. Transfer to the refrigerator and chill for at least 8 hours, preferably overnight, until fully set.
