Aussie Charcoal Chicken Shop Chicken Skewers

Ingredients

• boneless chicken thighscut into large 2.5cm / 1" squares, approximately 6 to 8 pieces per thigh800 g
• olive oilfor marinade3 tbsp
• extra virgin olive oilfor cooking, plus 3–4 tbsp to brush the pan3 tbsp
• garlic powderor 2 garlic cloves finely grated using microplane1½ tbsp
• onion powderor use more garlic powder as substitute1 tbsp
• paprikaregular/sweet (not spicy), smoked paprika works well too1 tbsp
• mustard powderor substitute 1 tsp dijon or yellow mustard, not spicy1 tsp
• dried oreganoor use thyme as substitute1 tsp
• curry powdersecret ingredient; use regular grocery store curry powder, such as Clives or Keens brand½ tsp
• cooking salt/kosher salthalve for table salt, increase 50% for flakes1¼ tsp
• black pepper½ tsp
• lemon juiceor substitute white wine vinegar, red wine vinegar, or similar2 tbsp
• bamboo skewersapproximately 20cm/8" long, soaked in water if using BBQ to prevent burning, or use metal skewers
