Pulse the almonds in a mixer until finely ground into a powder. Set aside in a bowl.

Heat ghee in a pan and add wheat flour and gram flour. Roast on low heat, stirring frequently, until the raw taste disappears and the flour turns light golden brown.

Add the almond powder to the roasted flour mixture and continue roasting for about 2 minutes to fully develop the nutty flavor.

Allow the mixture to cool slightly until warm but not hot, then add powdered jaggery and cardamom powder. Mix well.

Transfer the mixture to a lined tray, press down firmly, and level the surface to prevent cracks.

Let the barfi set for 30 minutes, then cut into pieces and serve.
