Season the pork chops on both sides with salt and black pepper. Keep the rind intact to protect the meat from drying during cooking.

Coat both sides of the pork chops generously with Dijon mustard, including the rind, for extra flavor.

Place the coated pork chops into a baking dish. Arrange thyme sprigs, bay leaves, sliced onion, and sliced garlic around the chops, adjusting quantities to your preference.
