Preheat oven to 350°F. Select very ripe, spotted, fragrant bananas. If they're still yellowish with green, roast them at 350°F for about 10 minutes until blackened, then let cool.

In a medium bowl, whisk together flour, baking soda, salt, and cinnamon. Mix thoroughly to distribute ingredients evenly.

Peel and mash the bananas. You can leave small chunks or mash until completely smooth, depending on your texture preference.

In a large bowl with a stand or hand mixer, cream the room temperature butter on high speed for about 3 minutes until light and fluffy. Scrape down the bowl as needed.

Add sugar, breaking up any large lumps before mixing until well combined.

Add the room temperature eggs one at a time, scraping down the bowl after each addition to ensure even mixing.

Add vanilla extract and mix until combined.

Add the mashed bananas and mix on low speed until almost combined.
