Preheat the oven to 350°F. If the bananas are not fully ripe, place them on a baking sheet and bake for 10–15 minutes until blackened and soft inside.

In a medium bowl, combine flour, salt, baking soda, and cinnamon. Whisk until blended and set aside.

Once the baked bananas have cooled, mash them by running a knife along the edge and squeezing into a measuring cup until you have 1¼ cups (328 g).

In a large bowl, beat room-temperature butter, brown sugar, and granulated sugar with a hand mixer or stand mixer on medium speed for about 3 minutes until light and fluffy.

Crack the 2 eggs into a separate bowl, then add them one at a time to the butter mixture, stirring on medium speed and allowing each egg to fully incorporate before adding the next.

Add the sour cream and mix until combined. The sour cream will contribute to a tender crumb.
