Cut the ripe bananas from the comb and slice them into smaller pieces.

Bring a pot of water to boil with 1 tablespoon of salt. Add the banana pieces and simmer for about 20 minutes until fully softened and cooked through—this prevents the bananas from becoming astringent or dark.

Drain the cooked bananas and let them cool. Peel away the skin and fibers, then cut into bite-sized pieces.

In a pot, combine 300 ml water, 750 ml pure coconut milk, 200 g granulated sugar, 70 g coconut sugar, 1 teaspoon salt, and 5–6 pandan leaves.

Bring the mixture to a boil, then add the prepared banana pieces. Cover the pot and simmer until the coconut milk comes back to a full boil.

Pour in the remaining 250 ml of coconut milk, bring to a boil once more, then turn off the heat and serve.
