Prepare the pumpkin using one of three methods: roast whole (with skin, rinsed) in a 180°C oven for 45 minutes; boil cubed pieces in water for about 20 minutes; or steam for 20–25 minutes. Allow the cooked pumpkin to cool completely.

Combine ingredients in a blender, food processor, or with an immersion blender: mix the 250g cooled pumpkin flesh with the 4 eggs, 150g cream, 300g cream cheese, 20g cornstarch, and 100g sugar. Optional: add a pinch of cinnamon. Blend at low speed without incorporating air until smooth.

Pour the batter into a loaf pan (approximately 20×6 cm). Sift if there are any lumps.

Bake at 220°C in a conventional or convection oven. For a creamy center with slightly firm edges, bake for 20–25 minutes; for a completely firm texture, bake up to 35 minutes. The cheesecake is done when the sides brown slightly and crack while the center still jiggles slightly when moved.

Cool and set: place the baked cheesecake in the refrigerator for at least 4 hours or overnight to achieve the proper texture for slicing.

Unmold the cheesecake and slice to reveal the creamy, rich center.
