Crispy Potato Tartlets with Raclette Cheese

   Cook the potatoes in boiling water for about 30 minutes until completely tender and easily mashed.

   Lightly grease the inside of tartlet molds with butter or oil. Press the cooked potatoes into the bottom of each mold to form a thin base layer, optionally keeping the skin on.

   Season the potato layer with black pepper and herbes de Provence. Optional spices like curry or cumin can also be added for variation.

   Sprinkle grated Parmesan cheese over the potato tartlets and drizzle generously with olive oil.

   Place the tartlets on a baking sheet and bake in a preheated 180°C oven for 30 minutes until the edges are golden and crispy.

   Remove the tartlets from the oven and place raclette cheese slices on top of each one, removing the rind if preferred.

   Return the tartlets to the oven or place under the broiler for 5–10 minutes until the cheese is completely melted.

   Remove from the oven and garnish with shredded prosciutto, cornichon slices, and fresh green onions. Serve hot.
