Prepare the rice. If using freshly cooked rice instead of day-old, cook it with less water than usual and let it cool slightly so excess steam evaporates, which will ensure a fluffy texture in the final dish.

Cut 250g of beef into small pieces.

Marinate the beef by combining it with 1 tsp soy sauce, 1 tsp dark soy sauce, 1 tsp Shaoxing wine, 1/2 tbsp cornstarch, 1/4 tsp baking soda, 1/4 tsp white pepper, and 1 tbsp oil, then massage well.

Prepare vegetables by finely dicing half an onion.

Slice 3-4 green onions thinly, keeping the white and green parts separate—the whites will be stir-fried to infuse the oil, and the greens will garnish the finished dish.

Finely chop 3 cloves of garlic.

Blanch half a cup of frozen peas and half a cup of frozen carrots for about 2 minutes, then drain thoroughly to prevent excess moisture from making the fried rice soggy.

Crack 4 eggs into a small bowl, add a pinch of salt, and beat well.

Make the sauce by combining 1 tbsp soy sauce, 1 tbsp oyster sauce, 1 tbsp Shaoxing wine, 1/2 tsp sugar, 1/2 tbsp chicken bouillon powder, 1/4 tsp white pepper, and a pinch of MSG (optional), and mix well.

Heat 2 tbsp of oil in a large wok or frying pan over high heat. Pour in the beaten eggs and cook for about 30 seconds until 70% cooked, then remove and set aside.

Add another 2 tbsp of oil to the same wok, heat it, then add the marinated beef and spread it out. Cook for about 2 minutes until the beef is nicely seared on the outside, as this browning adds significant flavor to the dish.

Remove the cooked beef and set aside. In the same wok with the flavorful oil, add the diced onion, white parts of green onions, and chopped garlic, then stir-fry for 2-3 minutes until fragrant.

Add 4 cups of rice and mix well, stir-frying for about 2 minutes to ensure every grain is coated with the aromatic oil.

Add the cooked carrots and peas, then pour the sauce around the edges and cook for 20-30 seconds to caramelize.

Continue stir-frying for about 2 minutes until the rice is completely coated with sauce.

Add the cooked eggs and beef back in, then toss together for about 1-2 minutes, breaking the eggs into small pieces as you mix.

Taste the fried rice and add salt as needed. Turn off the heat, add the green onion tops, toasted sesame oil, and sesame seeds, then toss gently to combine before serving.
