A classic Filipino stewed dish of beef kaldereta featuring tender beef cooked with potatoes, carrots, and olives in a flavorful sauce.

Ingredients

beef~2 kgest.
soy sauce~3 tbspest.
garlic~6 clovesest.
onions~2 mediumest.
tomato sauce~3 tbspest.
beef brothor beef bouillon/beef powder, or water may be used~4 cupsest.
bay leaves~2 leavesest.
potatoes~4 mediumest.
carrots~3 mediumest.
green olivesoptional~1 cupest.
liver spreador peanut butter may be used~2 tbspest.

Combine beef with soy sauce, mix well, and marinate for 30 minutes.

Sauté garlic until slightly browned, then add onions and cook for about 2 minutes until softened.

Add the marinated beef to the pan and stir-fry for 3 to 5 minutes until the outer surface is light brown.

Add tomato sauce, then pour in beef broth (or water with beef bouillon/powder), and add bay leaves for aroma.

Cover and bring to a boil, then reduce to a gentle simmer and continue cooking until the beef is completely tender.

Add potatoes, carrots, and green olives (if using), then stir in liver spread (or peanut butter), and simmer for about 8 minutes.

Add chili flakes and bell peppers, then cook for about 3 minutes.

Season with salt and black pepper to taste.
