   Melt the ghee in a pot, add the diced onion and garlic, and cook until the onions soften.

   Pour in the apple cider vinegar and half a cup of bourbon, and increase the heat slightly since there's now plenty of liquid in the pot.

   Add the chipotle peppers, tomato paste, Worcestershire sauce, soy sauce, and ketchup, then stir to combine.

   Add the cayenne pepper, smoked paprika, salt, black pepper, honey, and half a cup of apple juice, stirring to thin the sauce slightly since it will thicken as it cooks down.

   Turn off the heat and use an immersion blender to blend the sauce smooth, then stir in the remaining apple juice (10 oz total).
