Rinse the lamb chops thoroughly with lemon juice, vinegar, and cold water to clean them well.

Coat the lamb chops with a little oil and season with salt, black pepper, garlic powder, paprika, chilli powder, curry powder, all-purpose seasoning, and frozen green seasoning cubes. Mix well; marinating overnight is ideal but not required.

Add oil to a pan followed by brown sugar, cooking on low to medium heat for about 5 minutes until the sugar caramelizes to a deep brown color.

Add the seasoned lamb chops to the caramelized sugar, cover the pan, and let them sear. Check after about 2 minutes to ensure both sides are evenly browned.

Add the frozen green seasoning cubes, cover the pan. After about 2 minutes, stir everything together; the cubes will have naturally thawed.

Let the liquid in the pan reduce and evaporate. Once mostly dry, add 1-2 tablespoons of ketchup and stir well.

Pour in about 3-4 cups of water, add the whole scotch bonnet pepper (keeping it intact to control the heat level), and fresh thyme.

Cover the pan and simmer on low heat for 45 minutes to 1 hour until the lamb chops are very tender, stirring occasionally. Lamb cooks quickly and easily, so adjust the time to your preference.

Once cooked, garnish with fresh parsley and serve.
