Set up two bowls for wet and dry ingredients. Pour 3 cups of Guinness stout into the wet ingredients bowl.

Add 4 teaspoons of browning, 2 tablespoons of vanilla extract, 2 tablespoons of mixed essence, 2 tablespoons of molasses, and 2 teaspoons of lemon juice to the stout. Mix well.

Add 1 cup of brown sugar and 1 cup of granulated sugar to the wet mixture. Stir well until the sugar is fully dissolved.

Pour 0.5 cup of melted unsalted butter into the sugar mixture and keep stirring until well combined.

Crack 4 eggs, remove the germ from each (the white part), then whisk lightly. Pour the beaten eggs into the wet mixture and stir until incorporated.

Prepare dry ingredients: sift 6 cups of all-purpose flour. In a separate bowl, combine 1 teaspoon of nutmeg, 1 teaspoon of baking soda, 6 teaspoons of baking powder, 2 tablespoons of cinnamon, 1 teaspoon of salt, and 1 teaspoon of allspice. Whisk all dry ingredients together gently.

Add the sifted flour to the wet mixture a little at a time, stirring gently and continuously until fully combined with no lumps.

Stir in 1 cup of the rum and wine-soaked raisins until evenly distributed throughout the batter.

Pour the batter into two greased 9-inch pans. Bake in a preheated 350°F oven on the middle rack for at least 1 hour, or until a toothpick or knife inserted in the center comes out clean (about 1.5 hours total).

Before baking, place maraschino cherries on top of each bun for decoration.

Once the buns are baked, remove them to cool. Make the glaze: on low-to-medium heat, combine 3 tablespoons of unsalted butter and 2 tablespoons of honey, then add 2 tablespoons of jackfruit jam. Stir continuously until everything is smooth and well combined.

Using a silicone pastry brush, brush the hot glaze evenly over the top of each baked bun, making sure to get it into the crevices. This creates a shiny finish and helps seal the bread.

Let the buns cool completely before slicing and serving. Traditionally, serve alongside cheese.
