Butterfly Pea Flower Honey Lemon Drink (5 Liters)
A vibrant blue-to-purple butterfly pea flower drink sweetened with honey and fresh lemon juice. This recipe is designed for commercial production with low cost and simple preparation.

If using fresh butterfly pea flowers, soak in cold water for about 10 minutes to clean, then drain thoroughly. If using dried flowers, use directly without soaking.

Remove the green sepals (calyx) from the butterfly pea flowers, keeping only the colored petals, to prevent bitterness and grassy flavor.

Pour 5 liters of water into a large pot, add 10 pandan leaves and 1 teaspoon of salt, cover and bring to a boil.

Add 1 kg of rock sugar to the boiling water, cover the pot and let it dissolve completely, then bring back to a boil.

Remove the lid, add the prepared butterfly pea flowers, cover again, and continue simmering until the flowers completely release their color and dissolve into the liquid.

When the liquid turns deep blue, remove from heat and strain through a fine cloth in two layers to obtain a clear drink.

Add 75g lemon powder (or 250ml fresh lemon juice) to the strained drink and stir immediately. The color will transform from deep blue to purple-pink.

Add 150g of honey and stir thoroughly until well combined.

Once cooled, pour into glass bottles or serving glasses with ice, or portion into 250ml bottles for sale.
