Ingredients
dried shrimp
soak in hot water for about 15 minutes until softened
100 g
coconut sugar
500 g
good quality shrimp paste
150 g
water
100 ml
fish sauce
1 tbsp
chili powder
1 tbsp
fresh chilies
30–50 g
shallots
finely chopped

Soak the dried shrimp in hot water for about 15 minutes until softened.

Rinse the softened shrimp in water 1–2 times to clean them.

Divide the shrimp into two parts: pound or blend one part until broken, and reserve the other part whole.

Add 100 ml of water to a pot, then add the coconut sugar. Heat over medium-low heat until the sugar begins to dissolve.

Add the shrimp paste and continue heating, pressing firmly with a spatula to help it melt together with the sugar.

Reduce heat to low. Once the shrimp paste and sugar have melted together well, add 1 tablespoon of fish sauce.

Add the pounded dried shrimp and the reserved whole shrimp pieces. Stir well to combine.

Turn off the heat. Add the fresh chilies and chili powder, followed by the chopped shallots. Stir everything together well.

Transfer to a jar and cool. Store in the refrigerator for months.
