Prepare all vegetables and herbs. Thoroughly wash the peppers, scotch bonnets, ginger, and fresh herbs. There is no need to wash onions and garlic.

Remove the leaves from fresh herbs (oregano, thyme, cilantro, parsley), discarding the tough stems. Use only a small amount of oregano as it is very strong.

Prepare the thyme by removing some of the tough outer stems and cutting into small pieces.

Cut the green bell peppers. Remove the inner white parts and cut into fairly large chunks since they will be blended.

Cut the red bell pepper into large chunks for color and a slight variation in flavor.

Prepare the scotch bonnets. Use 4 peppers and remove most of the seeds to control the heat level, as the seeds contain most of the heat.

Cut the ginger into small pieces, keeping the skin on. Since ginger has a lot of fiber, cutting it small helps it blend better in the blender.

Prepare the garlic. Use one and a half heads of garlic. Press the garlic gently to loosen the skin, then peel and roughly chop.

Prepare the onions. Cut in half, remove the dry outer layers, and cut into large chunks as they will be blended.

Prepare the scallions by cutting off the usable parts and discarding the roots.

Transfer all the chopped vegetables to a blender.

Pour in approximately 5 tablespoons of olive oil and some white vinegar as liquid to help everything blend properly.

Blend everything together using a high-powered blender. It may take multiple pulses to fully blend everything and ensure all vegetables and herbs are completely processed.

Check the mixture again. If there are still visible chunks, continue blending until you reach the desired consistency.

Add the remaining olive oil (approximately 3 tablespoons) and additional white vinegar. Blend again until everything is fully combined.

Season with black pepper and salt to taste. Taste and adjust seasonings as needed.

Squeeze in lemon juice to help preserve the seasoning.

Transfer the green seasoning into a clean container with an airtight seal to prevent air from getting in. Store in the refrigerator for up to two weeks.
