A classic chicken and cheese sauce dish with a French twist. Tender chicken breast paired with a silky-smooth cheese sauce using French Comté cheese instead of traditional Parmesan, enhanced with Vin Jaune. Served with root vegetables and potatoes.

Prepare the chicken breast by removing the connective tissue that attaches the muscle to the bones to prevent toughness.

Season the chicken breast on both sides with grey salt, rub with olive oil, and refrigerate until ready to cook.

Prepare root vegetables (turnips and carrots) and baby potatoes by cutting and cooking them.

Sear one side of the chicken breast in butter and oil for 5 minutes over medium-high heat until golden, then remove from pan and set aside.

In the same pan, cook chopped onions until softened, about 5 minutes.

Add smoked paprika and deglaze with Chardonnay wine, then reduce until nearly dry.

Stir in mustard and heavy cream, and simmer for about 10 minutes.

Blend the sauce until completely smooth using a high-powered blender.

Return the seared chicken breast to the pan, cover with sauce, bring to boil, and cook on low heat for 15 minutes.

Check the vegetables for doneness and cut them to the desired shape.

Remove the chicken breast from the sauce. Add Comté cheese to the sauce, bring to a boil, and blend until smooth again.

Pass the sauce through a fine sieve to achieve a silky texture.

Finish by adding a small drizzle of Vin Jaune (yellow wine) for unique aroma and complexity.

Plate the chicken with the sauce and cooked root vegetables to serve.
