Ingredients
Chicken breast
Preferably a large breast, e.g. from a poulard
1 large
Dried morel mushrooms
Soaked overnight in cold water to rehydrate
~½ oz
est.
Chicken stock
Used for poaching chicken and making the sauce
~2 cups
est.
Cremini mushrooms
Chopped
~8 oz
est.
Shallots
Chopped
~2
est.
Garlic
Crushed
~3 cloves
est.
Fresh thyme
~4-5 sprigs
est.
Butter
Used both for sautéing and finishing the sauce
~3 tbsp
est.
Heavy cream
~1 cup
est.
Vin jaune (optional)
Adds depth of flavor if available
~¼ cups

Salt
~½ tsp

Black pepper
~¼ tsp

Steps

The night before, soak the dried morels in cold water to fully rehydrate them slowly. Keep the flavorful soaking liquid for later.

Poach the chicken breast in chicken stock at a gentle simmer for about 20 minutes. Remove the chicken and set aside, reserving some of the stock.

Melt butter in a pan and sauté crushed garlic and fresh thyme until fragrant.

Add the chopped cremini mushrooms and sweat until softened, then stir in the chopped shallots. Season with salt and black pepper.

Deglaze with the reserved morel soaking liquid and chicken stock, then reduce the mixture by about two-thirds.

Strain the liquid back into the pan, add the rehydrated morels and heavy cream, bring to a boil, and simmer for about 20 minutes.

If available, finish with a splash of vin jaune, and swirl in a few knobs of butter just before serving for a glossy finish.

Slice or plate the poached chicken breast, spoon the morel cream sauce over it, and serve.
