Chicken Char Siu and Tomato Tsukemen

Tomato-based tsukemen, a popular ramen dish in Japan, paired with easy Japanese-style chicken char siu made in the microwave. The savory umami of tomato creates a refreshing dipping sauce that appeals even to those who prefer lighter flavors.

Carefully remove excess fat from the chicken thigh with kitchen shears and bring the meat to room temperature.

Place the chicken skin side up and prick the skin many times with a bamboo skewer to help it absorb seasoning and prevent bursting during cooking.

Place the chicken in a clean plastic bag, add ginger juice and sake, and massage to coat the meat evenly with seasonings.

Combine honey, soy sauce, oyster sauce, grated garlic, and coarsely ground black pepper in a bowl.

Pour the marinade into the bag with the chicken and toss thoroughly to coat. Let sit for about 10 minutes.

Cut the bottom of the plastic bag and transfer the chicken to a heat-resistant container, skin side up.

Cover the container with plastic wrap, leaving it slightly open. Microwave at 600 watts for 3 minutes.

Remove the plastic wrap, pour the remaining marinade over the chicken, cover half the container, and microwave for 3 more minutes.

Let sit in the microwave for 2 minutes, then remove and cool. Pour the sauce over once or twice while cooling to develop a glossy texture and absorb more sauce.

Add olive oil and chopped garlic to a pan and stir-fry on medium heat until fragrant.

When the garlic becomes fragrant, add the chopped onion and stir-fry for about 5 minutes until slightly browned and fragrant.

Add the packaged diced tomatoes and stir-fry for about 5 more minutes, stirring frequently to prevent splattering and maintain proper consistency.

When the sauce darkens and thickens, add the chicken stock powder. Add water or chicken broth to adjust the consistency so the noodles can hold more sauce.

Add your favorite cheese and stir until melted and evenly distributed.

Taste the sauce and adjust seasoning with salt and pepper. Turn off the burner.

Boil the fresh ramen noodles according to package instructions, rinse with cold water, drain thoroughly, and coat with a small amount of sesame oil.

Once the chicken char siu is cooled, slice it to the desired thickness.

Arrange halved cherry tomatoes, shredded cucumber, and sliced chicken char siu on top of the noodles.
