Prepare the vegetables. Place a cooling rack over the stovetop and arrange peppers and aubergine on top. Char them until the skins blister and blacken, turning them halfway through to char evenly on both sides.

Make the marinade. In a large bowl, combine red wine vinegar, olive oil, a few dashes of chipotle Tabasco, smoked paprika, crushed garlic cloves, salt, pepper, and dried oregano. Mix well, then add the peeled red onion to the marinade.

Prepare the chicken. Slice the chicken breasts into 1-cm-wide strips. Coat them thoroughly in the marinade, ensuring every piece is well covered. Marinate overnight if possible, or for at least an hour, though cooking immediately will still taste better than no marinade.

Cool and peel the vegetables. Once charred, cover them in a bowl to steam for 10 minutes. Gently peel away the blackened skin, preserving the sweet caramelized layer underneath (avoid rinsing with water as it washes away flavor). Scoop out the soft aubergine and slice the peppers into similar-sized strips as the chicken.

Season the vegetables. Place the peeled vegetables in a bowl and toss with fresh coriander and lime juice.

Cook the chicken. Heat a skillet until very hot and add the marinated chicken. Allow the marinade to caramelize and cook into the chicken for 3 to 4 minutes. Flip and cook until all the chicken is beautifully golden.

Warm the tortillas. Heat flour tortillas in a hot skillet for a few seconds on each side to soften and warm them through.

Assemble and serve. Present the sizzling chicken and vegetable mixture directly in the pan. Allow each family member to build their own fajitas, topping with crumbled feta cheese, scooped avocado, fresh coriander, and a squeeze of lime.
